Mexican Enough with the easter eggs and hot cross buns, lets get back to real food.

 

And by real food, I mean Mexican food.

Seeing as though Easter is considered one of the most important holidays throughout Central America, it’s only fitting that we dive in and get out guac’ on!

 

This is a big fav in the Feed Me crib, and too good not to share. The zesty freshness of the guac and salsa, mixed with the spicy crunch of the veg creates a flavour frenzy in your gob. It's simply an all round winner! You would think after months of travelling through Central and South America, I would be over Mexican food...NUP!!

 

Have a crack at this easy-peasy meal:

 

Salsa 2 tomatoes, seeded and diced 1 red onion, diced 1 capsicum, diced (any colour) Juice of one lime A generous sprinkle of chopped parsley S&P

 

Guac 1 ripe avo Juice of half a lime/lemon A good dash of water S&P Blend it all up in your blender until it is a runny consistency, for a true Central American guac - no chunky guac in CA, I can vouch for that!

 

Cooked veg 1 capsicum, cut into strips 1 red onion, cut into wedges 4 mushies, sliced Cook up in a pan with a bit of coconut oil, adding a generous amount of cumin, paprika and some cayenne pepper if your game. Meat eaters - insert favourite meat here.

 

Serve it up by placing cooked brown rice in a bowl, followed by a layer of mixed lettuce, the cooked veg, zesty salsa and a very decent drizzle of guac all over the top.

For an even more tantalising taste explosion, grill some pineapple pieces and add to the mix - it will blow your mind!
